JOB TITLE: Restaurant Supervisor
DEPARTMENT: Restaurant
REPORTS TO: Executive Director
SUMMARY
The restaurant supervisor is responsible for the oversight and supervision of the restaurant department, including meeting budget goals, inventory management, scheduling, cleanliness of all food service areas, training, hiring and supervision of all restaurant staff. Reports to the Executive Director and is supported by the Head of Dining.
DUTIES AND RESPONSIBILITIES
* Has awareness and practices in accordance with the regulations of the state.
* Practices good infection control and universal precautions.
* Prepare and serve nutritious meals.
* Prepare and plan nutritious daily and/or weekly menus.
* Kitchen, stock room, food areas and dining room are kept clean.
* Prepare alternate meals as required.
* Ensure food is nutritional, appetizing, prepared as planned and served in a timely manner.
* Ensure appropriate meals and snacks are served to residents with special needs.
* Ensure proper storage of all foods and supplies according to health regulations.
* Order and keep sufficient supplies on hand to perform duties.
* Serve resident meals with a happy and professional attitude.
* Encourage residents to eat meals.
* Creating a restaurant schedule, assuring correct staffing according to census and working shift if alternative employee isn’t available.
* Assures appropriate planning, placing food orders with preferred vendors and demonstrate efficient use of the food ordering system.
* Responsible for knowledge of shipping and receiving methods including return and recall procedures, effective inventory control, including rotation of stock.
* Provide corporate chef and ED with Spend-Down reports.
* Responsible for assuring correct diets are followed, spread sheets and menus are correct.
* Assures that proper portions are served at the appropriate temperatures; condiments are appropriate to the meal and that the presentation is pleasing and proper.
* Assures that dining room furniture is clean and in good order and that furniture is arranged to accommodate residents and team members.
* Assures that dining room is cleaned after each meal.
* Assures that team members are knowledgeable of proper table settings.
* Assures all chemicals are stored appropriately and sanitation standards are observed.
* Conducts restaurant meetings as needed.
* Conducts thorough interviewing when hiring.
* Assures that restaurant staff personnel are appropriately trained.
* Assures that restaurant staff are appropriately attired and maintain appropriate personal hygiene.
* Assures that restaurant staff are praised and disciplined as appropriate.
* Observes and communicates any changes in resident physical or mental condition to the nursing supervisor.
* Avoids loss, breakage and waste of supplies and equipment. Maintains a neat and orderly restaurant department.
* Knows and follows emergency procedures
* Must attend and/or complete all assigned training to meet DSS regulations
* Responsible for keeping resident information confidential; respecting resident rights; respecting privacy
