About Wynn Al Marjan Island:

Wynn Al Marjan Island will be the first integrated resort in the UAE. Set to open in 2027, the resort will be located 50 miles from Dubai International Airport in the emirate of Ras Al Khaimah. The resort will offer 1,530 rooms and suites, 22 restaurants, lounges, and bars, a theater, and a beach club. It will feature multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.

About the Position:

Wynn Al Marjan Island is currently seeking a Head Dim Sum Chef – Chinese Cuisine to join the Culinary team.

The primary duties and responsibilities of this role are:

• Lead and manage the dim sum kitchen team, ensuring consistent execution of traditional and contemporary dim sum offerings. 

• Design and refine dim sum menus, including steamed, baked, fried, and specialty items, aligned with seasonal and promotional cycles. 

• Oversee daily mise en place, production schedules, and service readiness. 

• Ensure all dim sum items meet the highest standards of taste, texture, and presentation. 

• Train and mentor chefs in dim sum techniques, dough preparation, filling ratios, and folding methods.  

• Monitor food cost, inventory, and portion control to maintain operational efficiency. 

• Collaborate with the Executive Chinese Chef and outlet managers to align culinary offerings with guest expectations and brand standards. 

• Uphold HACCP compliance and enforce hygiene and safety protocols. 

• Participate in pre-opening planning, kitchen setup, and recipe development. 

• Maintain accurate records for production, inventory, and employee training. 

• Engage with guests when appropriate and respond to feedback to enhance the dining experience. 

• Uphold company policies and comply with the Code of Conduct. 

• Maintain grooming and hygiene standards in accordance with Department and Company expectations. 

• Support the Company recycling program and promote sustainable sourcing practices.

About You:

The ideal candidate for this position will have the following experience and qualifications:

• Degree or diploma in Culinary Arts preferred; specialized training in Chinese cuisine is highly desirable. 

• Minimum of 8 – 10 years’ experience in dim sum preparation within luxury hospitality or high-end Chinese restaurants. 

• Proven ability to lead and manage a dim sum team in a fast-paced, high-volume environment. 

• Expertise in dough making, filling preparation, and traditional folding techniques. 

• Strong organizational and planning skills with attention to detail. 

• Effective communication and interpersonal abilities. 

• Proficient in inventory and kitchen management systems. 

• Fluent in English; proficiency in Cantonese or Mandarin is highly desirable. 

• Must be at least 18 years of age. Must be a minimum of 18 years of age.
